Where food-grade CO₂ comes from

Carbon dioxide used in food and beverage production is almost never manufactured for that purpose alone. Most commercial CO₂ is captured as a byproduct of other industrial processes, purified, and compressed for sale. Major sources include ammonia and hydrogen production, ethanol fermentation, and natural gas processing. Some is also recovered from natural underground reservoirs.

Breweries and bioethanol plants are suppliers in their own right: yeast fermentation of plant sugars releases large volumes of CO₂, which can be captured, scrubbed of impurities, and resold as food-grade gas. The capture route makes no difference to the molecule. One carbon atom, two oxygen atoms. No animal-derived component at any stage.

Before it can be used in food, captured CO₂ is purified to food-grade specifications that limit contaminants such as sulfur compounds and hydrocarbons. Purification relies on filtration, scrubbing, and distillation. No animal materials enter at that stage.

How CO₂ is used in food production

The most familiar use is carbonation: CO₂ dissolved under pressure gives soft drinks, sparkling water, beer, and sparkling wine their fizz. In this role it is a direct additive and carries the E number E290 in the EU.

Beyond carbonation, CO₂ serves several production-stage functions that consumers rarely see. In modified atmosphere packaging, it displaces oxygen inside sealed packs of salads, bread, snacks, and other perishables to slow spoilage and inhibit microbial growth. As dry ice or liquid CO₂, it chills and freezes foods during transport and processing. Under high pressure and moderate temperature it turns supercritical and acts as a solvent. In that state it decaffeinates coffee and tea, extracts hop compounds for brewing, and pulls flavors and oils from plant materials. Supercritical CO₂ extraction is often preferred over chemical solvents because it leaves no toxic residue.

None of these applications involve animal inputs. The gas dissipates, evaporates, or stays in the finished product as dissolved carbonation.

Labeling and regulatory status

Whether CO₂ appears on a label depends on how it is used. Added directly to a product, as in carbonated beverages, it counts under EU rules as the additive E290. Beverage labels more often simply state "carbonated water" or "sparkling." In the United States, the FDA recognizes carbon dioxide as safe for food use, and carbonated drinks list "carbonated water" as the ingredient.
